- Cut out the star shapes using different size cutters and add them to a large bowl.
- Make salad dressing by mixing lemon juice and maple syrup until combined in a small bowl.
- Add salad dressing to salad, toss and adjust sweetness if needed.
- Serve immediately or chill for a few hours before serving.

- Prep Ahead – This is a recipe that tastes nice after a couple of hours. Prep ahead about 2-3 hours beforehand, refrigerate and mix occasionally so flavors in the salad develop.
- Store – Store leftovers in an airtight container in the fridge for up to 24 hours. It is best if you remove as much air as possible so probably easiest with a ziptop bag.
- Freeze – I don’t recommend freezing this recipe.
