Yummy Avocado Brownies

What you need:

  • 1 large avocado
  • 3 eggs
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened dutch-processed cocoa powder
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Combine the avocado, applesauce, maple syrup and vanilla extract in a blender of food processor. Blend until ingredients are well-combined and mixture has no clumps. Transfer to a large bowl and mix in eggs. Add the coconut flour, cocoa powder, baking soda and sea salt and stir until all ingredients are well-mixed.

Add the batter to a coconut oil-greased 8×8 inch baking dish and bake in a pre-heated oven (350F) for 20-25 mins. Allow to cool for at least 20 minutes. Cut into squares and enjoy!

Keep brownies in an airtight container, shelf life is 2 days in room temperature. Store in the refrigerator for a longer shelf life.

Grilled Honey and Lime Pineapple

What you need:

  • 1 pineapple
  • 4 tablespoons unsweetened shredded coconut
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lime juice
  • Coconut ice cream or sorbet

Slice the pineapple into 3/4 inch slabs. This makes about 8 pieces. You can choose to keep the skin on or not, depending on your preference. Combine the honey and lime juice in a bowl and brush the mixture onto the sides of each slab of pineapple. Cook pineapples on greased grill over medium heat until grill marks appear, about 3 minutes per side. Remove from heat and transfer to serving plates. Sprinkle pineapples with shredded coconut and top with a couple of scoops of coconut ice cream or sorbet. Serve immediately.
